Are there any desserts more likely to cause controversy than the trifle? It’s a dish which is vastly more than the sum of its contentious parts, with the inclusion of each layer often hotly contested in households all over the country.

So what constitutes the perfect trifle? It is a dessert which has never gone completely out of fashion, perhaps due to its adaptability. A trifle can be an elegant yet indulgent affair, its pure, creamy facade hiding the rich, boozy delights within. It can also be the most vulgar of creatures – a garish, show-offy, child pleasing concoction topped with hundreds and thousands, or worse, the pieces of angelica and sticky glace cherries beloved of 1970s hostesses. LOL. Each to their own!

“You Scream, I Scream, We All Scream for Ice Cream”

Ever thought about making ice-cream using a steam oven? What?? We hear you say! Why? How?

In this video tutorial, we show you how to use the consistency of temperature from your steam oven to maximise the consistency of temperature when preparing a Crème Anglaise as the base for an ice-cream to die for.
