The range is vast… so where do I start?

As home cooks, the choice of knives you will need is generally dependent on your cooking habits and frequency. For instance, if you tend to cook loads of Asian dishes, you wish to add Santoko knives to your kit (The Santoku is a cross between a chef’s knife and a cleaver. Its cutting edge is straighter than a chef’s knife, so there’s less opportunity to ‘rock’ the blade for fine slicing). All knives will, however, do a variety of tasks very well though all types of knives have their own strengths and weaknesses.

At the end of the day, one primary factor we believe is key to your quality knife selection is comfort. How a knife feels in your hand is, in our humble opinion, the starting point for knife selection.

Cooking with Steam Knives

A well-equipped home kitchen should have at least four types of knives, and it’s these we use daily in the Cooking with Steam production kitchen.

The Chef’s Knife (AKA Cook’s Knife), usually 20-25cm long, is the most important and the workhorse of the kitchen. You’ll use it for chopping, slicing, and dicing a variety of foods. A Carving Knife is a similar length though thinner and is used mainly to cut cooked meat. A bread knife measuring 23-25cm with rounded serrations makes for easy hot and cold bread slicing without tearing. A paring knife, usually 8-9cm long, is perfect for peeling and coring.

CHEF’S KNIFE

The Füri Pro Chef’s Knife means business. With a blade measuring 23cm it’s longer than most knives and this extra length gives it more leverage for those large cutting jobs.
