In this episode Linda has made Zucchini Slice following the gift of some home grown zucchini’s from a friend.  Given that those who love Zucchini Slice will tell you that their recipe is the best, Paul was asked about the technique of drawing moisture out and if it would make a noticeable difference.

Paul had some useful tips including adding salt to the grated zucchini and then washing thoroughly before use.  This technique is also useful for cooking with egglants (aka aubergine).
