Cauliflower Gratin

Ingredients

  • 1 Cauliflower
  • 40gm Butter
  • 40gm Plain Flour
  • 500gm Milk
  • 80gm Sharp Tasty Cheese or Gruyere
  • Parmesan Cheese
  • Salt and White Pepper

METHOD

Cut the cauliflower into bite size florets and place on a perforated steam tray and set aside
In a small saucepan heat butter over medium flame, once melted add the flour and cook out for at least 3-4 mins stirring constantly
Add 1/2 the milk and whisk quickly, continue whisking until it becomes thick add the remaining milk and whisk again until the mix is the consistency of thickened cream, take off the heat, season and pour into a mixing bowl, add diced cheese and fold in.
Place the cauliflower in a pre-heated oven steam setting 100 degrees for 10 mins
When cooked change the oven setting to “combi mode’ 200 degrees. Place cauliflower in with the white sauce and mix well
Pour into a gratin dish and grate over a little parmesan, place into the oven for 20-25 mins until golden on top Serve straight away

HINTS & TIPS

This is great with roast lamb or beef, try mixing some broccoli in with the cauliflower for a difference You can also make a potato version of this with slice potato and caramelised onion
